

Fazenda Ambiental Fortaleza (FAF) is a specialty coffee farm located in the municipality of Mococa, in São Paulo State, Brazil. The estate traces its origins back to the 19th century. In the early 2000s, Silvia and Marcos Croce began transitioning the farm from conventional coffee farming to regenerative agricultural practices focused on soil health and biodiversity.
Today, FAF is recognized within the specialty coffee industry for its emphasis on environmental stewardship, quality production, and long-term sustainability.
After assuming management of the farm, the Croce family initiated changes to address soil degradation and long-term farm viability. The transition included reducing synthetic chemical inputs and implementing regenerative farming techniques.
These practices include the integration of shade trees, organic matter management, biodiversity restoration, and agroforestry systems. Coffee trees are cultivated within a diversified ecosystem designed to improve soil structure and environmental resilience.

One cannot talk about Fazenda Ambiental Fortaleza without mentioning the “Bob-o-Link” project. Named after the Bobolink bird, which migrates thousands of miles from North America to Brazil to nest in this clean environment, this project is far more than a coffee brand.
Under this initiative, Fazenda Ambiental Fortaleza acts as a mentor to neighboring small-scale farmers, encouraging them to move away from chemicals and toward sustainable, high-quality practices. For a chocolatey and bold profile, we recommend brewing this coffee with a Moka Pot or Espresso. However, to capture the elegant nutty and caramel notes of Fazenda Ambiental Fortaleza, a V60 or French Press brew at approximately 90°C will present the body and aroma in perfect balance.
