The Story
On Prau the cloud sits low and the soil is volcanic. The Typica was picked at full ripeness and sealed in mosto instead of water: cherry juice full of native yeasts, which drove the fermentation. Over time the sugars deepen and the acidity softens. The cherries then dried slowly in cool mountain air.
