Coffee Details
Producer: Edwin Noreña
Farm: Campo Hermoso
Region: Circasia, Quindío
Varietal: Caturra
Process: Honey, co-fermented with lychee

The Story
The Caturra was picked only when it measured above 23° Brix, a reading of the sugar in the cherry. It soaked briefly in water, fermented once, and was depulped with all of its mucilage kept. Then came a second fermentation, sealed, with dehydrated lychee added to the tank.

We say that plainly because it matters. Part of the lychee in this cup is lychee. Edwin’s skill is in making the fruit and the coffee read as one thing rather than two. Edwin is a fourth-generation producer and a Q Grader, trained at Colombia’s national training service, SENA, where he later taught.
